A rich and savory dish for breakfast, brunch, or whenever! Low cal and relatively low fat.

Recipe Ingredients for Mushroom-Tomato Omlets-- Low Cal, GF

4 medium mushrooms
2 cloves garlic
1/3 cup onion, chopped
1 medium whole tomato
1/2 tbsp extra virgin olive oil
1/2 tsp cayenne powder
1/4 tsp black pepper
12 large egg whites
2 oz sun-dried tomato yogurt cheese

Recipe Directions for Mushroom-Tomato Omlets-- Low Cal, GF

  1. 1. Chop mushrooms, garlic, onion, and seeded and rinsed tomatoes.

  2. 2. Place tsp of oil in pan over medium-low heat.

  3. 3. Cook and add all spices. Remove from heat.

  4. 4. Meanwhile beat egg whites, three at a time with 1 tsp warm water.

  5. 5. Spray a medium sized pan with spray oil. Put the three beaten eggs in the pan.

  6. 6. While cooking and almost set, use a spatula to run along the edges of the omlet and allow uncooked eggs to run underneath.

  7. 7. When almost set, put 1/4 of the veggie mixture and 1/2 oz of thinly sliced, crumbled, or shredded cheese on top.

  8. 8. When cooked through, flip both sides to middle to fold.

  9. 9. Repeat steps 4-8 with each 3 eggs.
