You can substitute a 1/2 c cream mixted with 1 c chicken stock for the 1-1/2 c cream. Nutmeg, celery salt, chopped parsley, and a few drops of lemon juice add nice flavor.

Recipe Ingredients for Mushroom Timbale

1 c cream
4 eggs
3/4 t salt
1/2 t paprika
2 c mushrooms, chopped

Recipe Directions for Mushroom Timbale

  1. Preheat oven to 325 degrees.

  2. Combine cream, eggs, salt, and paprika, and beat with a wire whisk.

  3. Add 2 c chopped, sauteÚd mushrooms, drained.

  4. Bake in a bath for 20 - 50 minutes. It is done when a knife inserted in the center of the mold comes out un-coated. Invert into a serving platter.
