Recipe Ingredients for Mushroom Tartelettes

1 sheet Puff Pastry
2 cup pieces Mushrooms
1.5 cup (1" cubes) Eggplant
1 tbsp Olive Oil

Recipe Directions for Mushroom Tartelettes

  1. Roast the eggplants in the oven at 375 degrees until the flesh is caramelized.

  2. Meanwhile, roast the mushrooms with some thyme sprigs, olive oil, and salt.

  3. Puree the eggplants until a smooth paste, pass through a tammy and reserve in a squeeze bottle or pastry bag.

  4. Take the puff pastry out of the freezer, and using a small square mould, punch out 40 squares.

  5. Return to the freezer, and allow to reset for about 20-30 minutes.

  6. Cook the puff pastry at 375 on parchment paper, with another piece of parchment on top of it, and another baking sheet on top of that to ensure the pastry does not over rise. Bake until just golden brown.

  7. Allow the pastries to cool, then pipe about a tsp of eggplant puree, and some sliced mushrooms on each tart.
