Mushroom and Tarragon Soup Recipe

A hearty but relatively low calorie soup - add cream/creme fraise for instant cream of mushroom :)

Recipe Ingredients for Mushroom and tarragon soup

750 g mushrooms
175 g potato
2 small onions
2 stalks celery
5 cloves garlic
1 tbsp olive oil
2 stock cubes
1 tsp tarragon
1 tsp thyme

Recipe Directions for Mushroom and tarragon soup

  1. Blitz in a food processor/chop onion, celery and garlic finely and fry off for about 5 mins

  2. Chops mushrooms roughly but quite small (I like to use pulse on my food processor for time!)

  3. Add mushrooms and herbs and sweat with the onion mix for another 5 mins.

  4. In the meantime boil the kettle and peel and dice the potato.

  5. When the 5 mins are up or the mushrooms look like they have released some liquid (and hence a little slushy).

  6. Make up stock and add to soup along with potatoes and simmer for 15 mins.

  7. Allow to cool and blend.
