Earthy flavored rice (beef + mushroom) with a healthy dose of vitamin C from yellow peppers

Recipe Ingredients for Mushroom and Sweet Pepper Rice

1 cup white rice, uncooked
2 cups sliced button mushrooms
1 tbs olive oil
1 beef bouillon cube
1 sweet yellow pepper
2 cups water
1/4 tsp salt
1/2 tsp dried thyme

Recipe Directions for Mushroom and Sweet Pepper Rice

  1. In a medium sized pot, saute thyme, mushroom and pepper in olive oil until mushrooms begin to sweat and become tender.

  2. Add two cups of water, rice, and beef bouillon cube to pot and bring to boil; cover and let simmer about 15 minutes or until all water is absorbed and rice is done.
