Recipe Ingredients for Mushroom stuffed Chicken Breast

2 tablespoons butter
1 cup of onion chopped
2 cups sliced mushrooms
1 cup of carrot
4 cups of spinach
2 tablespoons chopped parsley
1 tablespoon of grated parmesan
1 tablespoon chopped basil
1 tablespoon of grated lemon zest
1 slice of bread
1 cup low sodium chicken stock
3 pound skinless chicken breast

Recipe Directions for Mushroom stuffed Chicken Breast

  1. In a non stick skillet over med heat, melt butter.

  2. Saute the onions 4 minutes.

  3. Add sliced mushrooms and shredded carrots; saute until tender 4-5 minutes.

  4. Stir in spinach, parsley, sheese and basil- cook 2 minutes.

  5. Remove from heat; stir in finely chopped bread, 2 tablespoons of teh broth and the lemon zest.

  6. Preheat oven 325, spar 9 x 13 inch baking dish.

  7. Place the chicken breast between two sheets of plastic wrap; witha meat mallet or rolling pin, pound to an even thickness.

  8. Remove the top sheet of plastic and spread the mushroom mix over the breast, leaving a 2.5 inch border on all sides.

  9. Starting with short side, roll up the chicken breast an tie at 2 inch intervals with kicthen string.

  10. Place the roll seam side down, in the baking dish and cover loosely with foil.

  11. Bake, basting frequently with the pan juices until thermometer reads 180 degrees.
