Recipe Ingredients for Mushroom Strudel

48 oz white mushrooms
1 red onion, diced
1 tsp thyme
1/2 tsp coriander
1/2 tsp salt
1/2 tsp pepper
1 1/2 cups evaporated nonfat milk
103 grams white wine
120 grams phyllo dough

Recipe Directions for Mushroom Strudel

  1. Chop and mix together both the onion and mushrooms. Heat a skillet over medium heat and cook vegetables for about 5 minutes until the onion is softened. Add seasonings, milk and wine and simmer for 12-15 minutes. Transfer to a bowl and refrigerate until thickened, about an hour.

  2. Preheat oven to 375 degrees and line a baking sheet with parchment. Put 1 sheet of dough in the center and spray with nonstick spray. Layer the remaining three sheets in the same fashion. Spoon filling onto the dough horizontally, leaving 1/4 inch border. Lift the filled end and roll up into a log. Turn the log one quarter turn so that it lies lengthwise in the center of the baking sheet. Spray the top with non-stick spray and bake until golden brown, about 30 minutes.

  3. Slice into 3 inch sections to serve.
