A yummy stroganoff without the meat!

Recipe Ingredients for Mushroom Stroganoff

2 tbs. olive oil
1 cup onion, chopped
5 cloves garlic, minced
8 cups crimini mushrooms, sliced
1 1/2 cups water
2 tbs. flour
1 cup sour cream
2 tbs. fresh parsley
1 tsp salt
1/2 tsp pepper

Recipe Directions for Mushroom Stroganoff

  1. Over medium heat saute onion and garlic in olive oil until soft and golden.

  2. Add mushrooms and 1/2 cup water, sprinkle with salt to help the mushrooms soften. Cover and cook for about 5 minutes until mushrooms are softened.

  3. Dissolve flour in a small amount of water, whipping with a fork or whisk to remove any lumps. Add water to mushroom mixture, then add flour mixture. Bring to a simmer and cook, stirring constantly, until thickened.

  4. Once mushroom mixture is thickened, remove from heat and stir in sour cream, parsley, salt, and pepper. Adjust salt and pepper if needed.

  5. Serve over whole wheat noodles.
