Mushrooms are low-cal wonders, meaty in texture, with impressive amounts of potassium!

Recipe Ingredients for Mushroom Stroganoff

2 cup rice noodles, brown
1 cup yellow onion, sliced
12 oz white mushroom
1 clove garlic
8 oz white kidney beans, pureed
8 oz fat-free yogurt, plain
8 oz chicken stock
1 tbsp tomato paste
1/2 tsp black pepper
1/8 tsp sea salt

Recipe Directions for Mushroom Stroganoff

  1. Cook noodles and set aside

  2. Heat skillet over high heat for 1 minute, reduce heat to med-low, saute onion for 8 minutes, or until carmelized to bring sweetness. Add mushrooms and garlic. Saute about 5 more minutes

  3. Add kidney bean puree, yogurt, stock and tomato paste, stir until smooth. Stir in seasoning, salt and pepper

  4. Pour mushroom sauce over cooked noodles.

  5. Sprinkle with dried dill for added flavour.
