Recipe Ingredients for mushroom stroganoff

400 ml coconut milk
1 medium onion
200 g button mushrooms
200 g portabello mushrooms
1 clove garlic
10 g vegetable stock cube
1 tsp salt
1 tsp pepper
1 tsp olive oil

Recipe Directions for mushroom stroganoff

  1. dice the onion

  2. crush and dice the garlic

  3. fry the onion and garlic in a pan until the onion is transparent.

  4. chop the mushrooms.

  5. add the mushrooms to the pan and cook gently until soft.

  6. add the coconut milk.

  7. add the seasonings.

  8. simmer for about 15 - 20 minutes or until the sauce has thickened. serve with rice or pasta.
