Mushroom Strata is similar to savory bread pudding. Layers of sturdy bread and mushrooms soak in a light custard overnight, making for a dreamy, creamy texture. Bake ahead of time until puffed and golden, and rewarm in the oven or serve at room temperature. The filling will sink a bit if it's made ahead, but it's still lovely. And if you don't have a whole day to soak, simply layer everything in the morning, and pop in the oven as guests are arriving. The strata also works beautifully as a savory brunch dish. The recipe is special, but not untweakable. If you must, using nonfat milk will reduce the richness, and mushrooms can be mixed with a handful of hearty greens or chopped roasted red peppers for more color and flavor. Or, leave the mushrooms out and substitute roasted cauliflower, broccoli or cubes of roasted root vegetables. The eggs create a silky custard, binding with the bread. If made the day of, the dish is delicious, but when allowed to sit overnight so the bread soaks up all the custard, it gets even better. The recipe can be easily halved for smaller portions. Per serving: 305 calories, 15 g protein, 30 g carbohydrate, 13 g fat (5 g saturated), 160 mg cholesterol, 761 mg sodium, 2 g fiber.

Recipe Ingredients for Mushroom Strata

8 large eggs
4 cups milk
1/2 pound fresh ricotta
1/2 cup chopped parsley
1 teaspoon freshly ground pepper
3 tablespoons extra virgin olive oil
2 leeks, thinly sliced
3 garlic cloves, chopped
2 pounds mushrooms, such as oyster, portabello and cremini, thinly sliced
1 tablespoon chopped fresh thyme
2 teaspoons salt, kosher, more for seasoning
1/2 cup dry white wine, such as Chardonnay
1 pound bread, day-old country style, cut into 1/2-inch slices
1/4 cup freshly grated Parmesan

Recipe Directions for Mushroom Strata

  1. Instructions: Spray a 9-by-13-inch baking dish with cooking spray. Mix eggs, milk, ricotta, and parsley in a large bowl. Season with salt and pepper to taste.

  2. Heat oil in a pan over medium heat. Add leeks and cook until softened, about 5 minutes. Add garlic, and cook for 2 minutes. Add mushrooms, thyme, 2 teaspoons salt, and pepper, and cook, stirring often, until mushrooms have softened and most of the liquid has evaporated. Add wine, and cook until mostly evaporated.

  3. Arrange 1 layer of bread on bottom of prepared dish. Top with half the mushroom mixture, then half the egg-milk mixture. Arrange remaining bread on top, top with remaining mushroom mixture and remaining egg-milk mixture. Cover, and refrigerate for 4 hours or overnight.

  4. Preheat oven to 350. Sprinkle Parmesan over strata, and bake until puffed and golden, about 60-75 minutes. Let stand for 15 minutes before serving.
