Recipe Ingredients for Mushroom-and-Spinach Toss

8 oz pasta
1/4 cup pine nuts
2 tbsp butter
1 tbsp olive oil
8 oz fresh mushrooms, sliced
1/4 cup sun dried tomatoes
2 garlic cloves, minced
1/4 cup dry white wine
6 oz fresh baby spinach
3/4 tsp salt
1/2 cup Parmesan cheese, grated

Recipe Directions for Mushroom-and-Spinach Toss

  1. Prepare pasta according to package.

  2. Bake pinenuts on 350 5-7 minutes until fragrant and toasty.

  3. Melt butter with olive oil in skillet over medium heat; add mushrooms, and saute 5-6 minutes until golden and most of the liquid has evaporated. Reduce heat to medium and add tomatoes and garlic; cook, stirring constantly, 1-2 minutes. Stir in wine and cook 30 seconds, stirring to loosen particles from bottom of skillet. Stir in pasta and spinach and cook until wilted.
