Recipe Ingredients for mushroom spinach soup

1/2 lb shiitake mushrooms, choppoed
1/2 lb spinach
1 cup low fat soymilk,
5 scallions
2 tbsp rice vinegar
1 tsp dried basil
1 tsp garlic
1 tbsp miso
1 tsp lemon pepper
1 tsp whole wheat flour

Recipe Directions for mushroom spinach soup

saute scallions with mushrooms and vinegar in a non-stick pan. Add herbs. Wash spinach and add, let spinach steam. Add soymilk and flour and stir till it get creamy. Add miso into a blender (don't cook miso it kills the beneficial bacteria). Add contents of pan to blender with water as needed, puree as desired.
