Reuben sandwich made with a mushroom-spinach filling.

Recipe Ingredients for Mushroom-Spinach Reuben Sandwich

10 oz frozen spinach, drained
8 oz Portabella mushroom, diced
1 medium onion
1 cup sauerkraut
4 wedges Laughing Cow cheese, Garlic & Herb
8 slices light whole wheat bread
4 oz fat free yogurt
1 oz ketchup

Recipe Directions for Mushroom-Spinach Reuben Sandwich

  1. Saute spinach, mushrooms, and onions with Pam. Cook until tender and moisture is gone.

  2. Mix yogurt, ketchup together.

  3. Butter 1 side of 8 slices of bread. Flip over.

  4. Put laughing cow, dressing, sauerkraut, and 1/4 of mushroom-spinach-onion mixture on 4 slices of the bread. Top with remaining bread.

  5. Grill each side until done.

  6. Can make only 1 at a time if desired.
