Mushroom & spinach quesadillas

Recipe Ingredients for Mushroom-spinach quesadillas

1/2 c mushrooms
3 c raw spinach
1 c yellow onion
6 flour tortillas
1 c shredded cheese

Recipe Directions for Mushroom-spinach quesadillas

  1. Wash the spinach in a bowl with 1/2 lemon's juice. Let soak about 5 minutes then drain well. Do the same with the mushrooms. (the lemon juice is acidic and makes the dirt come off easier).

  2. Steam the spinach in a pan (or you can reserve till time to cook, and sear in with the mushrooms & onions).

  3. Saute onions in a light spraying of Pam or other spray-on oil. Chop mushrooms & add to onions. Add spinach and toss till spinach is cooked.

  4. Spray Pam or another oil spray on a skillet. Put 1/2 of a tortilla on the griddle and put in about a spoonful of the spinach/mushroom mixture. Add cheese on top and close, then flip when the tortilla is hard on the bottom. Repeat until spinach mixture is gone.

  5. Serves about 6.
