Recipe Ingredients for Mushroom Spinach Omelet

1/2 teaspoon olive oil
1/2 cup mushrooms, fresh, sliced
2 tablespoons green pepper, diced
1 tablespoon onion, finely chopped
1 cup spinach, fresh, torn
1 egg, large
3/4 cup egg substitute
1 tablespoons parmesan cheese, grated
1 tablespoons cheddar cheese, shredded, low fat
1/4 teaspoon salt
1/8 teaspoon red pepper flakes, crushed
1/8 teaspoon garlic powder
1/8 teaspoon pepper

Recipe Directions for Mushroom Spinach Omelet

In an 8-in. nonstick skillet, saute the mushrooms, green pepper and onion in oil for 4-5 minutes or until tender. Add spinach; cook and stir until spinach is wilted. Add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. Cut into wedges. Serve immediately.
