This dish is actually inspired by a portabella mushroom sandwich I had once. Since I am not a big bread eater I thought this would be great as a side dish.

Recipe Ingredients for Mushroom Spinach Melt

1 cup spinach, blanched
8 ounce mushrooms, sliced
6 ounce onion, chopped
1/4 cup provolone cheese, shredded
1 tbsp butter

Recipe Directions for Mushroom Spinach Melt

In a small pot add water and bring to a boil. While water is heating up in a skillet on medium heat melt butter. Add onions and cook till tender. And mushrooms and cook approx 3 - 5 mins more. Just before mushrooms are done add spinach to the boiling water. Cook for approx 30 sec - 1 min until it just starts to wilt. Remove with tongs and evenly spread over the mushroom onion mixture. Season to taste. Sprinkle with cheese and cook till cheese is melted then serve.
