I wanted to make the soup more filling and nutritous, so I added vegetables.

Recipe Ingredients for Mushroom & Spinach Add-In for Campbell's Select Gold Label Portabella Soup

25 grams shallots, chopped
10 grams garlic, chopped
60 grams mushrooms, crimini, sliced
70 grams Zucchini, sliced thin and cut into half moons
25 grams baby spinach, rough chopped
2 tbsp olive oil

Recipe Directions for Mushroom & Spinach Add-In for Campbell's Select Gold Label Portabella Soup

  1. Saute shallots and garlic over medium heat until translucent.

  2. Stir in mushrooms and let sit for 1 to 2 minutes so they will brown.

  3. Stir in zucchini and let sit for 1 to 2 minutes before stirring. Let sit again to allow additional browning.

  4. Add in spinach, stirring until spinach is wilted slightly.

  5. Add in carton of soup and reduce heat to low. Bring to temperature and serve.

  6. To add this into your food log, you will have to add the soup separatly.
