A Gluten Free lower fat mushroom soup

Recipe Ingredients for Mushroom Soup

2 tablespoons olive oil
1 large onion, chopped
2 pound button mushrooms, chopped
1 1/2 quarts chicken stock
1/2 teaspoon salt
1 cup whole milk
1/2 cup white wine

Recipe Directions for Mushroom Soup

  1. Heat oil in a 6-quart stock pot over medium heat

  2. Add onion and saute for 20 to 30 minutes until caramelized

  3. Add mushrooms and saute for another 5 to 10 minutes until tender

  4. add salt

  5. Pour chicken stock, milk and wine into pot, bring to a boil and then simmer for 10 minutes
