A thin soup which is a family favorite. It was originally a Weight Watchers recipe.

Recipe Ingredients for Mushroom Soup

12 oz mushrooms
4 tsp margarine
3/4 cup diced onions
1 clove garlic
2 cups water
1 1/2 tsp salt
1/4 tsp oregano
1 dash pepper

Recipe Directions for Mushroom Soup

  1. Using damp towel, wipe mushrooms. Chop by hand or with on-off motion in a food proecessor until finely chopped (do not puree); set aside

  2. In 4 qt. saucepan, het margarine until bubbly and hot; add onions & garlic and saute, stirring, until all liquid has evaporated and mushrooms are browned; stir in water and seasonings and bring to a boil. Reduce heat, cover, and simmer for 30 min. Divide into 4 mugs or bowls and springle each portion with scallion slices.
