Mushroom Soup Recipe

Makes 3 servings



Use low/no sodium veggie broth! Add carrots or other veggies if you wish. Also good to use soy sauce, but I don't like salty foods. Season to taste.

Recipe Ingredients for Mushroom Soup

2 teaspoons olive oil
2 cups mushrooms, sliced
1 onion, chopped
1 celery stalk, chopped
2 cups vegetable broth
2 tablespoons white rice
2 cloves of garlic

Recipe Directions for Mushroom Soup

  1. Heat oil in a wok over medium heat, and saute mushrooms, onion, and celery in the oil for 10 minutes.

  2. Add chicken or vegetable stock, rice, and soy sauce. Bring to a boil, and simmer for at least an hour.

  3. Serve hot!
