Chicken thighs with mushroom sourcream sherry sauce

Recipe Ingredients for Mushroom Sherry Chicken

4 cloves garlic, minced
3/4 medium yellow onion, diced
20 pieces crimini mushrooms, sliced
2 cups white rice, steamed
440 g Boneless Skinless Thigh Fillets
3 tbsp lemon juice
1/2 tsp black pepper
1/2 tsp salt
1 cup light sour cream
2 tbsp extra virgin olive oil
8 oz dry sherry

Recipe Directions for Mushroom Sherry Chicken

  1. preheat oven to 375 degrees

  2. place thighs in caserole dish

  3. sprinkle with pepper

  4. splash with olive oil, lemmon juice, and sherry (light splash each)

  5. Bake chicken for 1 hour, or until browning

  6. prepare white rice

  7. put remaining oil in sauce pan and heat

  8. saute garlic and onion til carmelized

  9. add lemon juice and mushrooms til mushrooms reduce

  10. add sherry, cream, sour cream and simmer 20 minutes

  11. reduce heat to thicken

  12. place chicken on rice, spoon sauce over
