Use 3 portobello mushrooms, 4 cremini mushrooms and 4 button mushrooms.

Recipe Ingredients for Mushroom Sauce

11 button mushrooms
1 tablespoon flour
2 ounces skim milk
3 ounces chicken boullion
1/2 tablespoon lemon juice
2 ounces butter

Recipe Directions for Mushroom Sauce

  1. Finely chop portobello mushrooms and thinly slice other mushrooms.

  2. Melt butter in saucepan over low heat.

  3. Add mushrooms, cook very slowly and stir occasionally until mushrooms reduce.

  4. Add lemon juice.

  5. Add flour mix in and cook on low heat for 2 minutes.

  6. Slowly add stock (or wine), stir until sauce thickens.

  7. Add milk (or whip cream) and season to taste with salt and pepper.
