A delicious risotto that's filling and creamy

Recipe Ingredients for Mushroom Risotto

1 cup Rice, Brown, Medium-grain
1/2 tbsp Butter
1/2 large onion
10 oz Sliced Baby Bella Mushrooms Packaged
1 tbsp olive oil
1 tsp nutmeg
1 tsp lemon pepper
1 tsp Dill Weed
1 Cheese Process Swiss Thin Slices
15 g FAGE Total 2 %
1 pinch of salt

Recipe Directions for Mushroom Risotto

  1. Combine the rice and 2 cups of water in a saucepan, bring to a boil, lower the heat, add a little salt and the butter, mix well and cook on low until all water is gone.

  2. In a different pan warm up the olive oil, add in chopped onions and sprinkle with nutmeg, saute until slightly clear and add in the mushrooms, sprinkle with lemon pepper and more nutmeg. When the mixture begins to brown, add in the rice, sprinkle all over with dill and lemon pepper, mix well, turn off the heat. Add in the yogurt and mix, put the cheese on top in small pieces all over the risotto and close the lid. In five minutes, stir and serve.
