Recipe Ingredients for mushroom risotto

1 onion
1/3 cup olive oil
1 tsp salt
2 tsp pepper
2 cup chicken stock
1 cup white wine
1 lbs mushrooms
5 tbs Parmesan

Recipe Directions for mushroom risotto

  1. cook onions in pan with half of olive oil, salt, and pepper until transparent

  2. add mushrooms and rest of olive oil, salt, and pepper.

  3. cook until no more liquid comes from the mushrooms.

  4. add rice, stir for 3 min until slightly toasted.

  5. add wine, cook until absorbed, stirring occasionally

  6. add half of chicken stock, cook until absorbed, stirring occasionally

  7. add rest of chicken stock and finish cooking

  8. serve with cheese
