Recipe Ingredients for Mushroom Risotto

1 tbsp. olive oil
1 small red onion
10 oz. mushrooms
10 oz. jasmine rice, uncooked
4 cups chicken broth
1/2 cup water
1 tsp. basil
2 tbsp. mascarpone cheese
3 tbsp. parmesan cheese

Recipe Directions for Mushroom Risotto

  1. Sautee onions and mushrooms in olive oil.

  2. Add rice and cooke for one minute.

  3. Add water and cook until absorbed.

  4. Add chicken broth, 3/4 cup at a time, waiting to add next batch until all has been absorbed.

  5. Remove from heat and stir in cheeses.
