Creamy mushroom risotto with lots of chunky vegetables.

Recipe Ingredients for Mushroom Risotto

2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, crushed
1 tbsp fresh parsley
1/8 tsp savory
1/2 cup sliced celery
5 oz sliced shitake mushrooms
1 1/4 cups skim milk
1 cup brown rice
3 servings (cups) vegetable stock
1 tbsp butter
1 cup grated Parmesan cheese

Recipe Directions for Mushroom Risotto

  1. Heat olive oil in a large pot. Add onions and begin to cook on medium.

  2. Add celery. Cook until onions begin to soften.

  3. Add garlic, mushrooms and seasonings. Cook until celery begins to soften. Stir well to avoid scorching the garlic.

  4. Add milk and rice and reduce heat to med-low. Simmer about 5 minutes. Stir.

  5. Add 1 cup of vegetable stock and simmer until liquid is mostly absorbed. Stir occasionally.

  6. Repeat for the next two cups.

  7. Add butter and stir it in well.

  8. Add Parmesan just before serving.
