Dead simple, very tasty risotto recipe that is easily adaptable. Dried porcini add extra rich mushroom flavor but can be omitted with still excellent results. Try adding fresh herbs and/or cooked chopped chicken...

Recipe Ingredients for Mushroom Risotto

1 cup arborio rice
3 cups chicken broth
1/2 cup white wine
2 cups crimini mushrooms, chopped
1 tbs olive oil
1 onion, chopped
1 clove garlic, minced
1/2 ounce dried porcini mushrooms (optional)

Recipe Directions for Mushroom Risotto

  1. Bring broth to simmer in heavy medium saucepan. Add porcini if using and simmer until just tender. Using slotted spoon, remove mushrooms and chop finely. Keep broth warm over low heat.

  2. Warm oil in heavy large saucepan over medium heat. Add onions; sauté until tender. Add crimini mushrooms; sauté until tender. Add porcini (if using), garlic; sauté 2 minutes. Add rice; stir 2 minutes. Add wine; cook until liquid is absorbed, stirring often, about 3 minutes. Add 1 cup hot broth; simmer until liquid is absorbed, stirring often, about 8 minutes. Continue to cook until rice is just tender and mixture is creamy, adding more broth by cupfuls and stirring often, about 30 minutes. You might need to add slightly more broth or water if necessary to obtain desired consistency--the rice should be tender but not mushy. Season with salt and pepper. Can be served with freshly grated Parmesan if desired.
