Mushroom Risotto Recipe

Simple, tasty, low-cal risotto recipe. I actually used mushroom broth, but it comes to about the same thing.

Recipe Ingredients for Mushroom Risotto

2 cups arborio rice
1 cup mushrooms
1 onion
1 tbsp olive oil
8 cups low sodium vegetable broth
2 cloves garlic

Recipe Directions for Mushroom Risotto

  1. Heat olive oil on medium heat in a large saucepan. In a separate pot, heat broth to a simmer, then reduce heat to low.

  2. Slice, dice, or chop onions and sautee over medium heat until just soft. Add garlic, and continue to sautee 1-2 minutes.

  3. Add arborio rice and mix thoroughly, stirring constantly.

  4. Add broth to rice and vegetable mixture 1/2 cup at a time. Allow time between additions for the broth to be fully absorbed by the rice.

  5. Once you have added approx. 4 cups of broth, add mushrooms.

  6. Continue to add broth 1/2 cup at a time, allowing rice to absorb it completely, until rice is al dente (but no longer crunchy). You should have added 7-8 cups total.

  7. Serve warm and eat!
