Recipe Ingredients for Mushroom risotto

1 tablespoon olive oil
4 1/2 ounces mushrooms
1/2 ounce dried porcini mushrooms
4 ounces arborio rice
1 onion, chopped finely
2 garlic cloves, finely chopped
1 teaspoon mixed herbs
1 1/2 pints stock, vegetable
1 salt and pepper, season to taste

Recipe Directions for Mushroom risotto

  1. Soak porcini mushrooms in boiling water for 15 minutes.

  2. Fry onion until soft for about 2 - 3 minutes then add the garlic and fry for a further 30 seconds, add the rice then slowly add the stock until liquid is absorbed but is not dry, it should be just right when the rice is soft and there is a creamy sauce thats thick and it coats the rice, you want it not too dry not too wet. For the last five minutes add chopped and rehydrated mushrooms and mixed herbs, season to taste, serve immediately and sprinkle either with grated mature chedder cheese or grated parmesan.
