Recipe Ingredients for Mushroom risotto

90 g arborio rice
150 g fennel (finely chopped)
70 g mushrooms (halved)
40 g onion (sliced)
2 stock cubes
1 tbspn olive oil
1 litre water (hot)

Recipe Directions for Mushroom risotto

  1. saute fennel, onions and mushrooms in olive oil until softened

  2. add rice and cook for 1 minute

  3. add stock cubes to water

  4. slowly add stock by half cupful until all absorbed - stirring frequently - test rice if more moisture required add a little more hot water - taste to check al dente then serve
