Delicious, creamy and very filling risotto - low in fat, but high i carbs due to the rice

Recipe Ingredients for Mushroom risotto

1 cup dry Risotto Rice
3 cup Organic Chicken Cooking Stock
2 cup, pieces or slices Mushrooms
100 grams Fancy Parmesan Shredded Cheese
1 small Onions
100 grams Yogurt
2 tsp Thyme, Fresh
3 1tsp Olive Oil
1 serving Wine - White - Glass

Recipe Directions for Mushroom risotto

Saute the onions and mushrooms in olive oil with half of the thyme, add the rice and cook this slightly translucent, add the wine and reduce, then you start to add the chicken stock, no more than one cup at a time, test the rice and when they're almost done, you add the parmesan and yoghurt. Add the last bit of thyme shortly before serving.
