Mushroom Risotto Recipe

This is a good recipe if you're trying to gain. It's a high calorie side dish or even a main course.

Recipe Ingredients for mushroom risotto

1 cup arborio rice
3 tbsp olive oil
1 tbsp butter
1/2 cup celery, diced
3 cups vegetable broth
1/2 cup chicken broth
4 button mushrooms, diced
2 shitake mushrooms, diced
1/4 cup portabella mushroom, diced
1/4 cup green pepper, diced
1/4 cup onion, diced
1 tsp garlic

Recipe Directions for mushroom risotto

  1. Saute onion and garlic in the butter.

  2. Add in celery and peppers and saute until celery and onions are almost transparent.

  3. Add all the mushrooms, adding a little olive oil to keep the pan moist. Saute for 1-2 minutes.

  4. Add rice and saute for 2-3 minutes

  5. In a separate pan, bring broth to a boil.

  6. Add broth to rice a 1/2 cup at a time, keeping at a very low boil.

  7. When the liqid is almost all absorbed, add more broth.

  8. Continue adding broth until rice is al dente. It takes about thirty minutes.
