A risotto cooked by my favourite ingredients. It can be served as main dish along with yogurt sauced spinach; or as a side dish almost all types of meat. Do not forget a lovely fruity home wine when it is served as main dish.

Recipe Ingredients for Mushroom Risotto from Olga's Healthy Choice

1 cup risotto rice
2 cups mushrooms
1 cup onion
20 g garlic
1 tbsp olive oil
1/2 cup parsley
1 pinch salt
1 pinch pepper
1 pinch cumin
1 pinch curry

Recipe Directions for Mushroom Risotto from Olga's Healthy Choice

  1. In a pan pure olive oil. Soften sliced onions in olive oil, add garlic and mushrooms. Stir them all together about 3 minutes on medium heat. Then add rice and some water. Cook it stirring continuously. Add water a few times until you have a cooked rice with its all starch free by stirring.

  2. Decorate with chopped parsley before served.

  3. Bon appetite!
