Easier to cook than you think. Very nutritious and tasty!

Recipe Ingredients for Mushroom Risotto (home made)

1 teaspoon butter
1 teaspoon olive oil
1 onion
1/2 kg mushrooms
1 c celery
1 c arborio rice
500 ml stock

Recipe Directions for Mushroom Risotto (home made)

  1. Put stock in a pot to boil

  2. In a largish frying pan melt butter, add olive oil

  3. Cook onion until transparent

  4. Fresh herbs from the garden make a fantastic addition at this stage.

  5. Add Celery

  6. Add mushrooms, when cooked

  7. Add rice, fry for about a minute and then

  8. Add stock all at once (stock must be boiling hot)

  9. Stir and then cover with a tight lid and leave on low for about 25 -30 minutes.

  10. If you can afford the calories serve with Parmesan Cheese added.
