Makes 8 servings



Easy to throw together with whatever you have on hand and delicious. Brown rice can be replaced with any instant rice you have on hand. Cream of mushroom soup can be replaced with any 'cream of' soup. Add more veggie's if you like or add chicken. Really versatile recipe.

Recipe Ingredients for Mushroom & Rice Bake

3 cups brown rice
1 can condensed cream of mushroom soup
8 oz can of sliced mushrooms
1 cup vegetable broth

Recipe Directions for Mushroom & Rice Bake

  1. Cook brown rice according to package, but cut back cooking time by half

  2. Mix cooked rice with all other ingredients

  3. Pour into greased baking dish.

  4. Cook at 350 for 30-40 minutes.

  5. Top with shredded cheese if you want about 5-10 minutes before casserole is done.
