Recipe Ingredients for Mushroom Quinoa Burgers

0.75 cup Quinoa
2.5 serving Extra Virgin Olive Oil
4 tbsp chopped Onions
4 oz Mushrooms
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1/2 cup Old Fashioned Oats
2 large Egg, Whole
3 tbsp Parmesan, Grated Cheese
1 tsp Salt, Table
1 tsp Pepper, Black
0.5 tsp, ground Basil, Dried
1/4 tsp Oregano
1/4 tsp Garlic Powder
12 tsp Stoneground Mustard
2 cups Hearts of Romaine

Recipe Directions for Mushroom Quinoa Burgers

  1. 1.Prepare quinoa as package label directs. Transfer to a large bowl.

  2. 2.Warm 1 Tbs. oil in a large skillet over medium heat. Saute diced onion for 3 minutes. Stir in diced mushrooms and diced bell pepper; cook, stirring until tender, about 2 minutes. Add vegetables to quinoa. Let cool. Mix in oats, egg,Parmesan, salt, pepper, basil, oregano and garlic powder. Shape into four patties.

  3. 3. Wipe skillet. Warm remaining 2 Tbsp. oil in skillet over medium-high heat. Carefully place burgers in skillet and cook for 6 to 8 minutes. Dlip and cook until golden, about five minutes lovner.

  4. 4. Toast buns; spread with mustard. top with burgers, tomatoes and spinach.
