Mushroom and Potato Chowder Recipe

Makes 4 servings



A hearty take on mushroom soup. Add salt and seasonings to taste-I like Thyme and garlic in this. Also delicious with a little dollop of sherry.

Recipe Ingredients for Mushroom and Potato Chowder

1/2 cup onion, chopped
2 T olive oil
2 T flour
1/2 t pepper
3 cups vegetable broth, low sodium
1 pound fresh mushrooms
1 cup celery, chopped
1 cup diced potatoes
1/2 cup chopped carrots
1 cup fat free half and half
1/4 cup Parmesan cheese, grated

Recipe Directions for Mushroom and Potato Chowder

  1. Saute onion in margarine until tender.

  2. Add flour and stir to make a smooth paste.

  3. Gradually add vegetable broth, stirring constantly. Bring to a boil, and cook one minute.

  4. Add the mushrooms, celery, potato and carrots.

  5. Reduce heat, cover and simmer 25 minutes or until vegetables are tender.

  6. Add half and half and Parmesan.

  7. heat through
