Adapted from Moosewood Restaurant Low-Fat Favorites. I prefer a larger serving with a side salad to round out the dish. This dish can easily be made vegan by using a vegan parmesan substitute or omitting altogether.

Recipe Ingredients for Mushroom Polenta Pie

3 cups water
1 cup cornmeal
3 tsp oil
1 large onion, chopped
1 garlic clove, chopped
10 ounces mushrooms, thinly sliced
4 1/2 ounces chard, stemmed and chopped
1/2 cup parmesan cheese

Recipe Directions for Mushroom Polenta Pie

  1. Prepare polenta by bringing 2 cups of water to a boil. While water heats, stir the remaining 1 cup of water into the cornmeal. When the water boils, reduce heat and whisk in the softened cornmeal. Add 1 teaspoon oil, cover and simmer on very low heat for 20 to 25 minutes, stirring frequently. Spread polenta evenly into a 11x7-inch dish that has been lightly sprayed with oil.

  2. Preheat oven to 400 degrees.

  3. While polenta is cooking, warm remaining 2 tsp oil in a large non-stick skillet. Add onions and garlic and cook on medium-low heat until onion is softened, about 10 minutes. Add mushrooms and continue to cook until they have released their juices, about 5 minutes. Stir in chard and continue cooking until chard wilts, about 2-3 minutes.

  4. Spread vegetables over polenta, season with pepper if desired, sprinkle with parmesan and with smoked paprika if desired. Bake for 20-25 minutes or until hot. Cool at least 10 minutes before serving.
