Recipe Ingredients for Mushroom Polenta Pie

3 cups water
1 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon olive oil
1 large onion, chopped
1 garlic clove
3 cups mushrooms
4 cups spinach

Recipe Directions for Mushroom Polenta Pie

  1. make cornmeal (bring 2 cups of water to boil, mix corn meal with remaining 1 cup of water, when water is boiling add the mushy corn meal, simmer on very low for 20 minutes stirring occasionally and with a lid)

  2. saute vegetables

  3. put polenta into a dish

  4. top with vegetables

  5. Bake for 20 minutes

  6. You can top with parmesean if you'd like
