3 medium zucchini
1 small summer squash
2 tablespoons olive oil
15 oz mushrooms
2 cups green pepper
3 cups red pepper
4 cups onions

Recipe Directions for Mushroom & Pepper Veggie Mix

  1. Heat olive oil in a very large pan.

  2. Chop all vegetables and put in pan over medium heat.

  3. Cook until all are slightly underdone, as mix will usually be cooked again in other recipes.

  4. Portion out into 1 cup servings.
