Recipe Ingredients for Mushroom, Peanut, Tofu Stew

1 T vegetable oil
2 c chopped onion
1 Celery
1 t salt
4 c sliced mushrooms
2 T fresh ginger, minced
28 oz diced tomatoes
3 c water
16 oz firm tofu, diced
3 c. kale
1/2 c. natural peanut butter
1/2 c. cilantro

Recipe Directions for Mushroom, Peanut, Tofu Stew

  1. In a large soup pot over medium heat, warm the oil. Add the onions, celery, and salt, and saute until soft. Stir in the mushrooms and ginger and cook for about 10 minutes, stirring occasionally.

  2. Add the tomatoes, water, peanut butter, and tofu, and bring to a boil. Reduce heat, cover, and simmer gently for 5 minutes. Add the spinach, cover, and cook for just a couple minutes, until the spinach wilts and turns dark green. Stir in the cilantro and serve.
