1 cup, pieces or slices Mushrooms
2 serving Egg, Whole
2 large Egg, White
1 cup Onions
1 tbsp Olive Oil
0.25 cup Ricotta, Part Skim Milk Cheese

Recipe Directions for Mushroom Onion Riccota Scramble

sautee mushrooms and onions on medium low heat in the olive oil. Crack four eggs and remove 2 of the yolks (gives you 2 egg whites and 2 whole eggs). Whisk until ready to pour over cooked mushrooms and onions. When egg is close to cooked add ricotta cheese and allow to melt. Serve once cooked through.
