baked quiche, high in protein (I use the reduced fat cheddar cheese but the recipe maker couldn't find it, therefore the fat content is much lower than mentioned in the recipe)

Recipe Ingredients for Mushroom/onion quiche

7 cups mushrooms
2 cups onions
3 eggs
1 1/2 cup egg substitute
1 cup ricotta cheese
8 ounce cheddar cheese
1 salt and pepper to taste

Recipe Directions for Mushroom/onion quiche

Sautee the onions and mushrooms together until the juice is gone. Mix the mushrooms and onions with the remaining ingredients. Add salt and pepper to taste. Bake in a baking dish for 45 minutes in a 350 degree oven.
