Variation on the Hungry-Girl Omlette

Recipe Ingredients for Mushroom Omlette

2 cups Egg Substitute
2 Servings Shredded Light Cheese (1/2 cup)
4 tbsp Salsa
6 medium Mushrooms
2 Servings Grated Parmesan Cheese (2 tbsp)
1/2 cup Unsweetened Almond Breeze

Recipe Directions for Mushroom Omlette

  1. Spray 9" pan with zero calorie baking spray.

  2. Pour in egg substitutes and almond breeze. Mix in salsa and shredded cheese.

  3. Chop up mushrooms, add to pan, mix well.

  4. Bake for 30 minutes on 375.

  5. Take out, add grated parmesan. Cook for another 20-25 minutes, or until top is puffy.
