from p90x but altered to use less egg whites, just for cheap reasons

Recipe Ingredients for Mushroom omelet

1 egg
2 egg whites
3/4 cup mushrooms
2 tablespoons green onion
1 roma tomato
1 1/2 ounces mozzarella cheese

Recipe Directions for Mushroom omelet

lightly beat eggs with fork and season w/ salt and pepper. Coat a small pan with cooking spray and place over medium heat. Add the vegetables and cook until tender. Add egg mixture and cook until set on the bottom. Sprinkle cheese over top, fold in half and cook longer until cheese is melted and eggs are set.
