This is an easy, heathy and TASTY salad. In the ingredients list, I made a few approximations to get the calorie count right on this website. Ignore the ingredients list in the next section and use the following instead: 1/2 head Romaine, 1/2 cup Baby Bella Mushrooms, chopped 5 Calamata olives, diced 1 tbsp parmesan, grated 1 tbsp Duke's or Hellman's Mayo 1 tbsp balsamic vinegar 1/2 tsp black pepper, fresh ground 1/2 tsp extra virgin olive oil

Recipe Ingredients for Mushroom and Olive Salad

1/2 head Lettuce, Cos Or Romaine
1/2 cups mushrooms, chopped
5 Olives
1 tbsp Parmesan, Grated Cheese
1 1/2 tbsp Mayo
1 tbsp balsamic vinegar
1/2 tsp black pepper, ground
1/2 tsp extra virgin olive oil

Recipe Directions for Mushroom and Olive Salad

  1. Chop lettuce, mushrooms, and olives as finely as desired. Put them in a salad bowl.

  2. In a cup, whisk together parmesan, mayo, vinegar, black pepper, olive oil.

  3. Top the salad with this dressing and toss.

  4. Serve Chilled.
