Serve this vegetable dish with lemon wedges to squeeze over. Use a mix of mushrooms (button, shitake, oyster, etc.)

Recipe Ingredients for Mushroom Medley with Spinach, Ginger & Soy

2 tsp sesame oil
1 c bell pepper, cut into strips
2 tbsp fresh ginger, minced
2 tbsp garlic, minced
4 c mushrooms, use mix of button, oyster & shitake
4 c baby spinach
1/4 c green onion, cut into thin strips
1 tbsp soy sauce

Recipe Directions for Mushroom Medley with Spinach, Ginger & Soy

  1. Heat oi and add red pepper, ginger and garlic. Saute 1 minute.

  2. Add all mushrooms and saute until brown - about 10 minutes. Add a tbsp of water if it gets dry.

  3. Add spinach and green onion. Stir until spinach wilts - about 2 minutes.

  4. Stir in soy sauce. Season with salt and pepper.

  5. Serve with lemon wedges to squeeze over.
