Vegetarian Main Course. Can be made into 6 muffin cups. Reduce cooking time to 15 minutes with an additional 5 minutes uncovered.

Recipe Ingredients for Mushroom Loaf

1 cup Reduced Fat Mild Cheddar Shredded Cheese
2 cups chopped onion
1 lb mushrooms, chopped
1 1/2 tsp sea salt
1 tsp basil
1 tsp thyme
1 tsp dill
16 g of garlic, minced
1 1/2 lbs grated carrots, about 6 cups
2 cups bread crumbs (process whole grain bread)
2 eggs, lightly beaten

Recipe Directions for Mushroom Loaf

Spray 9" x 13" baking pan and skillet with olive oil. Preheat oven to 350 degres. In a large skillet, saute onions over mediem heat for 5 minutes. Add mushrooms, garlic, herbs and salt and pepper. Saute 10 more minutes. Combine carrots, bread crumbs, cheese and eggs. Add the onion mixture. Put into prepared pan. Cover with foil. Bake 30 minutes covered, then remove foil and bake an additional 15 minutes.
