Recipe Ingredients for Mushroom and Leek Soup

4 ounces fresh mushrooms, sliced
1 cup sliced leeks
2 tablespoons smart balance butter
2 tablespoons olive oil
4 ounces dry white wine
31 1/2 ounces condensed beef broth
3 3/4 cup water
1/2 teaspoon ground black pepper
90 g uncooked orzo pasta

Recipe Directions for Mushroom and Leek Soup

  1. In a large pot over medium heat, saute the mushrooms and leeks in butter or margarine and olive oil until tender. Add the white wine and reduce liquid by half (cook down until it evaporates).

  2. Then add beef broth, water and ground black pepper. Bring to a boil and add pasta. Boil gently for 10 minutes, or until pasta is tender.
